We begin with a confession: this article was written after a culinary encounter with a sensational portion of Ravioli with Spinach, Ricotta and cream sauce with Parmesan and sage, a dish from the hands and kitchen of our chef, appreciated by us and by the customers who came to our restaurant.
Over a glass of white wine originating from the same country as the pasta, at Bella Italia, we decided to tell you about the fantastic journey of this pasta all the way to the Black Sea, at Hypnose Resort by the Sea in Vadu. The wine we recommend for this culinary assortment is any dry white wine to temper the rich flavor of the cream sauce with ricotta and parmesan.
The journey we suggest to a serving of ravioli in front of you begins in the small village markets of medieval Italy where colorful vegetables and fresh meats are lined up, and chefs of the time began to pack different fillings into the dough to create new flavors and textures. The earliest written records of ravioli appear in the 14th century, when it frequently appeared on the festive tables of Italy's noble families.

We find them in America 4 centuries later thanks to Italian immigrants who brought with them traditional recipes and recreated them in the New World. Also thanks to immigrants, ravioli made their way to Asia, where they took on new shapes and flavors when they became acquainted with local Asian cuisine. The Asian versions are often steamed or fried, stuffed with spices and spices, and fried.
